The HACCP System is the tool that helps the Food Experts to achieve a high level of food safety: in Europe, all agri-food companies in the secondary and tertiary sector are required to comply with the same application of the HACCP method. The 2020 revision of the Codex Alimentarius has introduced some important changes.
Course Audience
The regulation also requires employees receive ‘appropriate’ HACCP training so they can implement, manage, or work within the HACCP system safely. One further requirement is to show ‘appropriate’ training has taken place.

Course Objective
The New HACCP course: 852/2004 regulation revision collecting all the innovations introduced it is essential to understand the key parts of the future Food Safety Plan, as provided for in the (EU) Commission Regulation 2021/382 of March 3, 2021 which amends the annexes to the (CE) Regulation 852/04 on the hygiene of foodstuffs as regards food allergen management, redistribution of food and food safety culture
The course consists in a 4-hour Introductory Part and other 4 Parts lasting 8 hours each. Based on the needs of understanding/deepening the topics covered, it will be possible to attend one or more parts of course, as well as the entire training course.
The Introductory Part will be an overview on the new HACCP and its aspects. In the First Part the differences between the old and the new HACCP will be explored, through a real detailed reading of the new publication; in the Second Part the main novelty will be discussed in detail, represented by the Food Safety Culture, by studying its meaning and principles and by giving examples of practical application; in the Third Part, we will explore the Smart Tools available to support the new HACCP, i.e. data to be retrieved for a precise Hazard Analysis based on the geographical origin of ingredients and raw materials, Food Fraud, Supply Chain Management and Food Defense; in the Fourth Part, we will deepen the International HACCP, with particular reference to the Meat and Poultry HACCP, according to the USDA-FSIS requirements, the Juice and the SeaFood HACCP according to the FDA requirements with a parallelism also with the Canadian version of the SFCR.
Each participant will receive the Training Certificate from ITA Academy for the entire Course or for the individual Parts attended.

Rescheduling Policy:
You may reschedule prior to 15 days before your class date at no charge.
If you would like to reschedule 14 days or less prior to your class date, there will be a £100 rescheduling fee
Cancellations and Refunds:
Cancellations made 30 days or more before the scheduled class date will receive a full refund.
Cancellations made between 15 and 29 days before the scheduled class date will receive an 85% refund.
Cancellations within 15 days of the scheduled class date will not receive a refund.
Any cancellations that affect the group discount rates will be refunded according to both the discount and cancellation policies
